HOW TO MAKE LEMON GARLIC BUTTER SHRIMP AND ASPARAGUS
HOW TO DEFROST SHRIMP
There are several ways to quickly defrost shrimp. I'll share two of the easiest & safest methods that work best.
Place your shrimp in a stainless steel or fine mesh colander. Then, place the colander into a large bowl of cold water for 10 minutes. After 10 minutes has passed, replace the cold water in the bowl & submerge the shrimp for an additional 10-20 minutes. Following this your shrimp should be completely defrosted.
Another way is to take your shrimp out the night before & place them in a covered nesting bowl inside the refrigerator. By using this method they will be able to defrost overnight.
After you've defrosted the shrimp, we are ready to get onto the main event to create a ONE pan meal. Line a jelly roll pan with foil, add the asparagus, then toss with olive oil, garlic, salt and pepper. Take a look at my favorite kitchen gadgets in the shop, here. The roasting time depends on the thickness of your asparagus. If using thin asparagus for this recipe, roast for 4 minutes. If you have medium asparagus, then you’ll want to roast closer to 6 minutes.
Next remove cooked asparagus to one side of the pan and add your raw shrimp. To get restaurant quality succulent shrimp perfection, drizzle your shrimp with olive oil, toss with garlic, salt, pepper, paprika, red chili flakes and fresh parsley, then dollop the shrimp with 2 tablespoons cubed butter and the asparagus with 1 tablespoon butter.

Feel free to use more or less butter when you recreate this dish at home. After you roast your shrimp and asparagus for another 6 minutes, then drizzle with fresh, bright lemon juice.
The melted butter mingles beautifully with the lemon juice to create a light lemon butter sauce that you can use to also drizzle over rice or pasta.
